Whole Wheat Berry Tabbouleh

This is another recipe where cooked wheat berries stand in for bulgur wheat. If you prefer a texture more like the original you can pulse your cooked wheat in a food processor before combining with the other ingredients.


1 cup wheat berries

2 tomatoes, chopped

4 carrots, grated

1 bunch parsley, finely chopped

1 bunch I’Itoi onions or spring onions, finely chopped

1 tablespoon chopped mint

3 tablespoons extra virgin olive oil

3 tablespoons lemon juice

Salt and ground black pepper to taste


Boil wheat berries in water for 1 hour. Drain and let cool. In large bowl combine all ingredients. Toss well and serve or cover and refrigerate for up to 24 hours.
