Sausage, Couscous, and Vegetable Medley
I made this the other night trying to make use of some of the veggies we’ve received lately. I don’t measure ingredients, so I am estimating proportions. We liked it, hopefully someone else will too :). This recipe is adaptable, depending on the season and what you have available in your CSA share! The key is all the flavor in the sausage, but you can use pork, chicken or turkey or vegetarian sausage depending on your preference.
Ingredients
2-3 Sausage Links, sliced into 1 inch pieces
1 cup uncooked couscous
1 cup green beans, ends trimmed, diced
3-4 carrots, turnips, other root veggies or winter squash, sliced thin
2 cloves garlic, minced
Juice of 1/2 lemon
Several tablespoons chopped fresh herbs
2 green onions, sliced
1/2 bunch kale or hearty greens, sliced
1/2 teaspoon EACH cumin, curry powder, dried rosemary
Dash salt and pepper (to taste)
Directions
Cook couscous according to package directions, set aside. In a large pan, brown sausage for a few minutes over med high heat, stirring occasionally. Add spices, garlic, root veggies or winter squash, green beans, and continue to cook, stirring more frequently, until sausage is cooked through and veggies are nearly done. Lower heat to medium and add greens, stirring until cooked down. Remove pan from heat and stir in lemon juice, cilantro, green onion and couscous. Serve warm.
