Tomatillo and Citrus Salad

This tasty salad is great with grapefruit or tangerines, too.

Ingredients

4-6 tomatillos, husked, rinsed and sliced thinly
1 large orange, peeled and cut into sections (see note)
I small jalapeno, serrano or fresno chile, thinly sliced
1 shallot, thinly sliced
2 tablespoons orange, lemon or lime juice
2 tablespoons olive oil
Cilantro chopped (optional)
½ teaspoon cayenne, Tajin, or smoked paprika (optional)
Salt and pepper

Cut the citrus sections into bite size pieces and combine with the tomatillo slices in a bowl. Toss with the chile, shallot, citrus juice and olive oil, and season to taste with salt and pepper. This salad benefits from sitting for a while, however much time you have. When ready to serve, top with the optional cilantro and sprinkle with spice if using.

Note:  To peel an orange, cut off the top and bottom to make a flat surface. Place the fruit on one end and slice down along the curved sides to remove peel and white pith. Use a serrated knife , and add them to the salad.
