Sweet Potato Patties with Miso Sauce

Sara recently featured this dish at a CSA cooking demonstration.

Ingredients

Sweet Potato Patties

  • 1 cup leftover baked or steamed sweet potatoes, peeled and mashed
  • 1 cup cooked grains
  • 1 tablespoon flour

Miso Sesame Sauce

  • 2 tablespoons miso
  • 3 tablespoons rice wine vinegar
  • 1 tablespoons soy sauce
  • 1 tablespoons toasted sesame oil
  • freshly grated ginger, minced garlic and red chile flakes to taste

Directions

To cook sweet potatoes, saute veggies in a small amount of oil, over medium high heat for about 5 minutes. Pour sauce over vegetables, reduce heat to medium low, cover pan and cook until tender. Add water as needed to keep vegetables from drying out or sticking.

Mix ingredients together. If you prefer savory patties, add italian seasoning, curry or any other spices you prefer. Sprinkle with salt and pepper. If you prefer sweet patties, add raisins or other dried fruit and cinnamon if desired. Form mixture into individual balls about the size of a ping pong. Flatten patties, dredge in the flour and cook in a hot, well oiled skillet, over medium high heat for about 5 minutes on each side. Drain on a paper towel before serving.
