Pomegranate Guacamole
Tangy sweet pomegranate seeds make a fun addition to guacamole. Use as a dip, spread on toast or use as a topping for tacos.
Ingredients
- 2 ripe avocados
- Seeds from 1 small or 1/2 large pomegranate
- 1/4 medium onion, finely chopped
- 1-2 cloves garlic, minced
- Chopped roasted green chiles or finely diced hot pepper, to taste
- Juice from one lime
- Cilantro
- 1 tablespoon sour cream, optional
- Pinch of salt, to taste
Mash the flesh from two avocados with a fork then mix in the rest of the ingredients. Add extra lime juice or salt if needed.
