Miso Braised Daikon

Cooking radishes brings out their sweet flavors. You can try this with any radishes or even turnips but the large Korean or Daikon radishes have a great texture and flavor once cooked! This recipe calls for bonito flakes, shaved dried fish, which adds a great flavor. You could add a bit of oyster sauce for a similar taste or just omit entirely.

Ingredients

  • 2 large radishes, peeled and cut into a large dice
  • 2 tablespoons miso paste
  • 1 scant tablespoon bonito flakes
  • 1 1/2 cups water
  • Green onions, to garnish

Bring the water to a simmer and stir in miso and bonito flakes, until miso is dissolved. Add radish pieces, cover and let simmer for about 20 minutes, until radish is tender. Serve warm or cool, garnished with fresh chopped green onions.
