Lettuce Soup

Eat this soup chilled or hot. This is a great dish to prepare if you can’t chew your way through another salad! Top with croutons and/or finely diced carrots for a bit of crunch.

Ingredients

2 medium (or one gigantic!) head lettuce, cleaned and roughly chopped

1/2 onion, diced

1 tablespoon butter

1/3 cup frozen peas

1 quart broth

1/2 cup heavy cream

Lemon juice, to taste

Chopped green onions for garnish

Finely diced carrots for garnish

Salt and freshly ground pepper to taste

Directions

Saute onion with butter in a saucepan over medium heat until softened. Add lettuce and peas and cook until wilted. Add broth and cook a few more minutes. Using an emersion blender, puree until smooth. Or let cool slightly and puree in a blender or food processor. Add cream and season to taste with salt and pepper and a dash or two of lemon juice. Serve warm or cold, with any garnishes you like.
