Fall Arugula Salad
Apples and pomegranates add a sweet/tart pop to a simple arugula salad. Add nuts or seeds if desired.
Ingredients
1 share arugula, washed, dried and chopped
1 apple, cored and diced
2 tablespoons pomegranate seeds
2 tablespoons pepitas or chopped pecans
1 teaspoon Dijon mustard
- 2 tablespoons balsamic vinegar, red wine vinegar or cider vinegar
- 5 tablespoons olive oil
Salt and pepper to taste
Toss first four ingredients together in a salad bowl. Mix mustard, vinegar, oil and salt and pepper in a jar and shake until emulsified. Pour about half the dressing over the salad, adding more if needed and saving the rest for later.
