Easy Meyer Lemon Pie

This pie is also known as Arizona Blender Pie or Lazy Mary Pie, both names suggesting the ease with which the pie is made. You can use your preferred pie dough recipe here or use a frozen shell from the store. Even if it is an easy recipe, take some credit, you are not lazy if you are baking a pie!

Ingredients

  • 1 medium Meyer lemon, cut in quarters lengthwise and seeds removed
  • 4 eggs
  • 1 stick butter, softened
  • 1 1/14 cups sugar
  • 2 teaspoons vanilla
  • 1 pie crust, homemade or store bought

You will use the whole Meyer lemon in this recipe, but try to remove the seeds. You could also use about 8-10 kumquats instead. The sweet, edible peels on both of these citrus fruits add a nice flavor to the pie. Place all ingredients for the filling in a blender or food process and blend for about 2 minutes, until creamy and mostly smooth. Pour the mixture into a pie crust in a regular pie tin and bake at 350 degrees for about 45 minutes, until set and no longer wobbly in the middle. Let the pie cool so the filling can firm up a bit before you cut into. Since the pie was so easy, why not make a powder sugar stencil design on the top, or whip up a batch of lightly sweetened heavy cream to pipe on top?!
