Cuculicious Cooler

Try this basic recipe then adjust to your taste and what is available. Mint or basil would be great addition and a splash of gin wouldn’t be out of place.

Ingredients

2 ounces cucumber juice ( made by blending peeled, seeded cucumbers with a little water, then straining; it works out to about 1/2 medium size cucumber per cooler)
1/2 ounces ginger syrup
1/2 ounces lime juice

Seltzer water, to finish (very tasty with lime flavored seltzer)

Add first three ingredients to a small jar. Shake, and serve over ice, finishing with a few ounces of seltzer water, or to taste. Garnish with a thin slice of cucumber.

Note:  ginger syrup can be purchased online at King Arthur Flour or make your own by boiling a thumb-sized piece of ginger (no need to peel) in 1 ½ cups of water for 10 minutes, then leave to infuse overnight.  Next morning, remove the ginger, measure the water and add an equivalent volume of sugar.  Boil until sugar dissolves, bottle and refrigerate
